After not taking a shower for a few days, where does most of that smell come from?

Bacteria. A person's skin produces oil and sweat, both odorless but both containing trace degrees of nutrients -- nutrients on which bacteria feed.
And when any living creature feeds, it produces waste products that are usually stanky.
Hence the smell.
Everyone's BO smells a little different because each person also produces scented pheromones (which is what bloodhounds use to track people).
So a person's stank is the combination of both.
