The Long Way
I'm working on a project whose acronym would be A.S.S. Since I think I must refrain from using that acronym, I find I just have to write/scribble out the name as I write my notes. So much wasted time...

If they're your notes and no one else is going to see them, why not use the acronym anyway? Or call it AS. Or an A with a circle around it.
So can you say that you kick *ss on ASS? And if I write ASS as an acronym, do I not have to write it as *SS?
